Cupcake karma

Whilst I absolutely love baking, it’s problematic when there are only two of us in the house; I’m a staunch advocate of enjoying good food without guilt, but nobody needs to eat half a cake. So on the occasions when I do bake, I usually take most of it to the office to share with my workmates.

So few people have ovens in Singapore, that baking is seen as something akin to voodoo: a mysterious power wielded by a select few who’s top secret knowledge is handed down through generations, making it impossible for the uninitiated to ever bake a cake for themselves. Instead they settle for the commercial and highly processed variety which are either so fluffy they’re almost air, or a stomach-churning-density truffle. Hence my blue cake tin is a source of great happiness amongst those near my desk, so much so that I usually feel a little guilty. The immense gratitude my workmates shower on me isn’t quite justified by a relatively short amount of time I spent in the kitchen.

So, for my nearest neighbour’s birthday I decided to invest a little more effort in creating her gift. Presented in a white box with a red ribbon, these cupcakes were definitely worthy of the gratitude.

Choc Brownie Cupcakes

Karma Cake

This recipe is from Curtis Stone. As usual I amended it a little to match the ingredients in my cupboard and it worked beautifully however this blog has the original version if you’re a purist.

170 grams of good quality dark chocolate (70% cocoa if possible)
120 grams unsalted butter
1tbs cup of maple syrup
3/4 cup of caster sugar
2 eggs
1/2 cup of plain flour
1 tsp baking powder
2/3 cup of chopped macadamia nuts
12 rasberries

Icing
250 grams of cream cheese
1/3 cup of maple syrup
120 grams of good quality dark chocolate (again 70% cocoa is best)

Preheat the oven to 180 degrees. Combine chocolate and butter in a heat proof bowl over simmering water (making sure the bowl doesn’t touch the water) and stir until smooth. Mix in the maple syrup and a pinch of salt and set aside.

Beat the sugar and eggs for a few minutes then stir in the chocolate mix. Add flour and baking powder and stir until just combined. Add the nuts and stir through.

Spoon the mixture into a cupcake tray lined with cupcake liners. Curtis suggests 8 but I divided the mixture into a more modest 12 cupcakes. Bake for 20 – 25 minutes until the cupcakes puff and crack on top (brownie-style) and a skewer inserted into the middle comes out clean. Remove the cupcakes and let them cool completely.

To make the icing, beat the cream cheese until it’s light and fluffy. Add the maple syrup and beat for another 3 – 5 minutes. To melt the chocolate, put it in a heatproof glass bowl over simmering water (again make sure the bowl doesn’t touch the water) and stir until the chocolate melts. Allow to cool slightly, then add to the cream cheese mixture and beat until blended and fluffy.

Spread the icing over the cupcakes and top with a single rasberry.

The moral of this story is that good food and graciousness are poles in a virtuous circle. Make sure the cook in your life knows how much you like their creations, and you will be increasingly rewarded.

Lately I’ve been too busy to cook let alone blog about it as I’m studying for the Spanish Diploma exam in May. However a girl can not live on Spanish vocabulary alone. So, in the interests of broadening my education, Latino Man took me on a cultural excursion last week to discover one of South America’s great gifts to the world: Chocolate.

Fortunately, Unfortunately

Fortunately my sister invited me to dinner. Unfortunately her helper Judith was on holiday and could not cook for us. Fortunately my sister had bought steaks for a bbq. Unfortunately they didn’t defrost in time for dinner. Fortunately she gave me two to take home so they wouldn’t be wasted.

Steak Sandwiches with Caramelised Onions
For 2 people
2 x ribeye steaks
1 red onion
Splash of olive oil
A handful of cherry tomatoes
1 loaf of ciabatta bread
2 tsp of grain mustard
A handful of baby spinach or other greens

Slice the onion and cook in a frypan with the olive oil over low heat. Continue cooking the onions for 10 – 15 minutes until caramelised. A few minutes before serving toss in the halved cherry tomatoes.

Meanwhile place the steak on a hot grill plan until it is almost cooked to your liking. Take off the grill and let it rest covered with foil for a few minutes.

Cut two sandwich size chunks from the ciabatta and slice them down the centre. Cover one side with a teaspoon (or more if you like) of grain mustard. Cut the steaks into 1cm slices and lay them overlapping each other on the mustard covered slice of bread, add a layer of caramelised onions, top with some green leaves and complete the sandwich with the other slice of bread.

Unfortunately we couldn’t eat all of the steak in one meal. Fortunately this is also delicious the next day.

Quarantine

I hate my sister for her thin ankles and gorgeous long legs. I hate my sister for her natural stamina and sporting ability. I hate my sister for her straight hair (almost as much as she hates me for my wavy hair) but mostly I hate her for her iron immune system and comments like “I don’t do sick”.

But I love her for braving a case of the chicken pox (which she’s never had) in order to deliver me a care package whilst I’m confined to my apartment.

The package included basics like milk and bread, some organic fruit and yoghurt, essential chocolate reserves, some red meat to give my iron levels a boost, season 2 of Gossip Girl on DVD and some gorgeous flowers.

Thanks big sister. Without you I could add bored and hungry to my misery and self pity.

The Boy Cooks!

There is a French deli in our neighbourhood called Le Bon Marche and it is a very dangerous place for El Chico and I. The owners seem to keep a file on everything we’ve ever purchased from their store. Upon opening their door they will greet us by name and then ask “how was the [insert name or brand of cheese, meat, vegetable, fruit, cream, biscuit, bread, quince paste or petite madeleine we tried last time]“, followed immediately by “we just got some [insert name of irresistible food] from [insert name of a place in France]” that we end up buying.

Last week the boy went to buy some tomatoes and came home with a very expensive bag of lettuce, two different kinds of sausages, some feta cheese, some sun-dried tomatoes and a loaf of bread. I was not complaining however as from this bounty he made me this meal:

"Start blogging"

I am surrounded by creative people and I have always wished to be one of them, the type who are so passionate about what they create that they will happily, willingly devote to it the hours between their day job and sleeping. Designers, artists, musicians, DJs, people who can sew, these are the kinds of people I have always wanted to be. Alas it seems I end up managing these people as my day job and never being inspired to spend my evening hours doing anything but decompressing. I have for a long time resigned myself to the fact that I’m just not very creative.

But I recently discovered that this was not true. In fact I am creative most nights of the week and certainly for a good portion of my weekend. What I create is food, and it is consumed shortly thereafter, leaving no proof of my creativity except for a pile of dirty dishes (which the lovely boy will kindly clean for me).

So, in order to keep a record of my creations and culinary explorations, I’ve started a blog. It’s another thing that creative people do, and now I understand how they find the time and passion. My philosophy is that food made with love from quality ingredients can never be bad for you so carb-phobes and others suffering culinary depression beware.
